Baked oatmeal is a popular Amish breakfast. This one is quick and easy. The top is nice and crispy, while the oatmeal is creamy, yet full of texture. I sometimes add a good teaspoon of cinnamon to the sugar mixture. Or if using almonds, a bit of almond extract.

Easy and delicious, we can't think of a better way to start a cool day than with this baked oatmeal. The bottom layer is berry pie filling (we opted for blueberry) with fresh strawberries sprinkled on top and the combination of berry flavors is fantastic. Next, the sweetened oatmeal layer is tender and creamy once baked. This is a basic recipe that can be customized with extracts, spices, and pie filling to suit your taste buds. We topped it with vanilla yogurt and a few fresh berries for a wonderful breakfast.
