Baked oatmeal is a popular Amish breakfast. This one is quick and easy. The top is nice and crispy, while the oatmeal is creamy, yet full of texture. I sometimes add a good teaspoon of cinnamon to the sugar mixture. Or if using almonds, a bit of almond extract.

Ingredients For berry good baked oatmeal

  • butter
  • 3/4 c
    light brown sugar
  • 2 tsp
    baking powder
  • 1 tsp
    salt
  • 2 lg
    eggs
  • 2/3 c
    canola oil
  • 3 c
    old fashioned oats
  • 1 c
    milk
  • 1 can
    blueberry or blackberry pie filling (21 oz)
  • 2 c
    strawberries, washed and quartered
  • 1/2 c
    chopped walnuts or almonds
  • plain or vanilla yogurt, optional topping
  • splash of cream, optional topping

How To Make berry good baked oatmeal

    Preheat oven to 350 degrees F. Liberally butter a 9x13 baking dish.

    In a large bowl, combine the brown sugar, baking powder, salt, eggs, and canola oil. Whisk until smooth.

    Add the oatmeal and milk to the sugar mixture. Stir to combine.

    Open the can of pie filling and spread it to cover the bottom of the prepared baking dish.

    Sprinkle the strawberries evenly over the pie filling.

    Spread the oatmeal mixture over the fruit.

    Finally sprinkle the chopped nuts evenly over the top.

    Bake until golden brown and the top is crispy; about 35 - 40 minutes.

    Serve while hot. We like ours with a dollop of plain or vanilla yogurt or with a splash of cream.
