I always want something sweet for breakfast, but I dont want the calories. this is my solution. and you can make the batter ahead of time.

Ingredients For baked oatmeal cups

  • 1/2 c
    canned pumpkin
  • 1 lg
    apples, golden delicious, chopped
  • 1 c
    splenda for baking, brown
  • 2 tsp
    pure vanilla extract
  • 1 pinch
    salt
  • 2 c
    dry oats
  • 2 tsp
    pumpkin pie spice
  • 1 lg
    egg
  • 1 1/2 c
    almond milk, unsweetened

How To Make baked oatmeal cups

  • 1
    preheat oven to 350 degrees, line muffin pan with liners or spray with non-stick spray
  • 2
    combine all wet ingredients in seperate (larger) bowl, combine dry ingredients
  • 3
    add wet ingredients to dry ingredients, then add chopped apple, mix well . store in fridge overnight if not ready to bake.
  • 4
    fill muffin tins pretty much all the way (these dont really rise). and bake approximately 15-20 minutes or until toothpick inserted comes out clean. you can pretty much enjoy these right away.
