Ingredients For baked oatmeal

  • 3 c
    old fashioned oats (not quick cooking)
  • 1 c
    brown sugar (if you're worried about sugar intake, use the brown sugar/splenda blend)
  • 2 tsp
    baking powder
  • 1 tsp
    cinnamon
  • 1/2 tsp
    pumpkin pie spices
  • 1/2 tsp
    salt
  • 1/4 c
    dried fruit of choice such as raisins, cranberries, chopped dates, etc.
  • 1 1/4 c
    milk
  • 1/2 c
    applesauce (cinnamon applesauce is especially good)
  • 2 tsp
    vanilla
  • 2
    eggs

How To Make baked oatmeal

    Preheat oven to 350 degrees.

    Spray a 9x9 baking pan with non-stick cooking spray. Thoroughly mix all of the dry ingredients in a large bowl. Pour into the prepared baking dish.

    Whisk all of the wet ingredients together until thoroughly blended. Pour over the dry ingredients in the baking pan and incorporate them well. Bake for 35-40 minutes until the edges are very brown. Serve in a bowl with milk, if desired.

    This recipe can be made without the fruit OR using chocolate and/or peanut butter chips.
