Ingredients For baked oatmeal

3 cold fashioned oats (not quick cooking)

1 cbrown sugar (if you're worried about sugar intake, use the brown sugar/splenda blend)

2 tspbaking powder
-
1 tspcinnamon
-
1/2 tsppumpkin pie spices

1/2 tspsalt
-
1/4 cdried fruit of choice such as raisins, cranberries, chopped dates, etc.

1 1/4 cmilk
-
1/2 capplesauce (cinnamon applesauce is especially good)

2 tspvanilla

2eggs
How To Make baked oatmeal

1Preheat oven to 350 degrees.

2Spray a 9x9 baking pan with non-stick cooking spray. Thoroughly mix all of the dry ingredients in a large bowl. Pour into the prepared baking dish.

3Whisk all of the wet ingredients together until thoroughly blended. Pour over the dry ingredients in the baking pan and incorporate them well. Bake for 35-40 minutes until the edges are very brown. Serve in a bowl with milk, if desired.

4This recipe can be made without the fruit OR using chocolate and/or peanut butter chips.
