baked oatmeal
This lasts several days and I like to have it on hand for a quick breakfast. It can be served warm or cold and is great topped with yogurt and fruit. There are many variations and I have listed several in the directions.

-
1 coatmeal, uncooked
-
1 tspbaking soda
-
generous dashsalt
-
1/4 cpacked brown sugar
-
1egg
-
1 cmilk
-
1 scoopvanilla or chocolate protein powder, optional
-
1 tspvanilla extract
-
1/2 cchopped nuts, optional
How To Make baked oatmeal
-
1Preheat oven to 350 degrees F.
-
2Mash bananas in bowl.
-
3Add dry ingredients except nuts and mix. The protein powder is optional, but I prefer to up the protein content.
-
4Add wet ingredients and mix well. Stir in the nuts, if desired.
-
5Pour into a greased or parchment lined baking dish, 9x5 loaf pan, or muffin tins.
-
6Bake for 25 minutes. It should no longer jiggle when you shake the pan but you don’t want to dry it out. Let it rest 20-30 minutes before cutting.

7This is my base recipe and it tastes like banana bread. There are many ways to change it up: - Add chocolate chips - Brownie version - Add 1/8 cup cocoa powder, use white sugar instead of brown, chocolate protein powder instead of vanilla, add chocolate chips - Black Forest- add frozen cherries to brownie version, but remove nuts - Carrot cake - add 1/2 c grated carrots, 1/2 tsp cinnamon, generous dash nutmeg - PBJ - add 1/4 cup nut butter and 1/4 c jam of choice - Berries - add 1/2 c blueberries, strawberries etc Experiment and make it your own!
