Ingredients For bacon cheddar savory oatmeal with fried egg

  • 2 slice
    bacon
  • 1 sm
    shallot diced
  • 1 c
    rolled oats
  • 2 c
    water
  • 2 lg
    eggs
  • 3 oz
    grated cheddar cheese
  • salt and pepper to taste
  • 2
    scallions chopped
  • oil for frying eggs

How To Make bacon cheddar savory oatmeal with fried egg

    Chop the bacon and add to a hot skillet and cook until crisp. Remove with slotted spoon to a papertowel to drain. Add the shallot to the bacon grease and saute 1 minute. Add the oatmeal to the pan and stir them around for 15 seconds. Add the water, salt and pepper and simmer on low heat 8 until 10 minutes

    Fry the eggs over easy in the oil. Place the oatmeal in 2 serving bowls. Top with cheese, Fried egg, bacon pieces and scallions.
