I made these for breakfast this morning...they were a hit. Make sure you slice your apples thin enough to get done. I used Granny Smiths. I loved the tartness against the sweet syrup... Enjoy! My photos

Ingredients For apple in the middle pancakes

    tart apples (granny smith), peeled and cored (i peel, slice in rounds, then cut out the center)
  • 2 Tbsp
    cinnamon
  • 2
    eggs, lightly beaten
  • 2 c
    whole wheat or white flour
  • 2 1/2 c
    milk
  • 1 tsp
    salt
  • 2 Tbsp
    sugar
  • 4 tsp
    baking powder

How To Make apple in the middle pancakes

    Slice the apples into thin rings, toss with cinnamon, and set aside.

    Mix together remaining ingredients until blended.

    For each pancake, pour 1/3 cup batter onto hot griddle. Place 1 apple ring in center of each pancake. When set, flip pancake to cook other side

    Turn onto plate so that apple ring is showing. Serve with warmed syrup
