I hadn't found a quinoa recipe I liked, but I found a recipe that had promise. It served as the inspiration for these mini frittatas. You can add any ingredients and spices you like to suit your taste and dietary needs. They can also be baked as regular or large muffins by adjusting the baking time. Refrigerate or freeze and pop them in the microwave for an easy snack or meal. Make them healthy or decadent, just be sure to season well, as they can be bland.

1 cwater

1/2 cquinoa

2eggs
-
2egg whites
-
1 czucchini, shredded
-
1 cshredded cheddar cheese

1/2 cham, finely diced

1/4 cdiced onion

1/4 cchopped fresh basil

salt & pepper
How To Make anything goes quinoa frittatas

1Preheat oven to 375 degrees. Grease a 24 cup mini muffin pan.

2Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and the water has been absorbed, 15 to 20 minutes.

3Place eggs and egg whites in a large bowl and whisk to combine. Add cooked quinoa, zucchini, cheese, ham, onions, basil, salt and pepper to the eggs. Stir to mix all the ingredients.

4Spoon mixture into mini muffin cups.

5Bake in preheated oven until the edges of the frittatas are golden brown,10 - 15 minutes.

6Remove from pan and serve hot or at room temperature.
