These pancakes are such a refreshing change for fall. They are positively delicious, and very filling. I got the recipe from copyKatchat.com. I doubled the recipe, thinking it would not make enough for my boys who are all big eaters. However they were filled and more than satisfied-they said really great! One of my daughters hates pancakes, but she had to try one, because of the lovely smell. She said they were the best pancakes she's ever eaten! I added 1/8 teaspoon of ground cloves (1/4 tsp when I doubled the recipe.) They really are nice.

Ingredients For amish pumpkin pancakes

  • 1 c
    flour
  • 1 pinch
    baking soda
  • 2 Tbsp
    grandulated sugar
  • 1/4 tsp
    ground cinnamon
  • 1/8 tsp
    ground nutmeg
  • 1/8 tsp
    ground ginger
  • 1/8 tsp
    ground cloves
  • 1
    egg, well beaten
  • 1 1/4 c
    milk
  • 2 Tbsp
    butter, melted (or any shortening )
  • 1/2 c
    canned pumpkin or mashed sweet potato

How To Make amish pumpkin pancakes

  • 1
    Combine flour, soda, sugar and spices. Combine egg, shortening, pumpkin and milk; add to flour mixture, beating until smooth.

    Bake on hot, lightly greased griddle, turning only once. Serve hot with butter and syrup or confectioners' sugar.
