These pancakes are such a refreshing change for fall. They are positively delicious, and very filling. I got the recipe from copyKatchat.com. I doubled the recipe, thinking it would not make enough for my boys who are all big eaters. However they were filled and more than satisfied-they said really great! One of my daughters hates pancakes, but she had to try one, because of the lovely smell. She said they were the best pancakes she's ever eaten! I added 1/8 teaspoon of ground cloves (1/4 tsp when I doubled the recipe.) They really are nice.

1egg, well beaten

1 1/4 cmilk

2 Tbspbutter, melted (or any shortening )

1/2 ccanned pumpkin or mashed sweet potato
How To Make amish pumpkin pancakes

1Combine flour, soda, sugar and spices. Combine egg, shortening, pumpkin and milk; add to flour mixture, beating until smooth.

2Bake on hot, lightly greased griddle, turning only once. Serve hot with butter and syrup or confectioners' sugar.
