From a favorite nearby cafe. I go to get this breakfast sandwich and this has got to be the most filling and delicious one ever! My homemade version doesn't include bacon or other meat, but fresh veggies, quick-cooked frozen spinach (if I don't have the fresh spinach), and a good cheese melted on top! This version dated 9/10/11 included spinach, grated fresh lemon, avocado, mozzarella, and an egg on multi-grain toast. A Pepperidge Farm sandwich thin could be used.

Ingredients For all good for me breakfast sandwich

2 slicegood quality multi-grain bread, toasted

1-2fresh fried egg(s)

1 cpartial package of baby spinach or frozen spinach cooked

1ripe avocado, sliced

2 sliceprovolone or mozzarella cheese

1 pinchsea salt and ground black pepper on each half sandwich

1 pinchgrated lemon rind in spinach when cooking it and some to sprinkle on top when no tomato is used

1ripened tomato (from a local garden), optional
How To Make all good for me breakfast sandwich

1Toast the bread.

2Microwave the spinach.

3Slice tomato and avocado.

4Fry one or two fresh eggs to desired taste.

5Place on top of toast and top with mozzarella.

6If you place the cheese on top, then microwave for one minute or less, checking to see when the cheese is melted. Broil if preferred until golden and the cheese is melted enough.

7Top with tomato slices, spinach, grated lemon, and avocado.
