Here is one of those recipes that took shape based on what happened to be in the refrigerator. One bite will be savory and the next will be sweet. Perfect summer breakfast with sliced fresh tomatoes.

Ingredients For sweet & savory summer grits

3 cmilk

1 cwater
-
2 tspkosher salt

1/2 tspfresh ground pepper

1 cstone ground grits (not instant)

1/2sweet onion, fine diced

1 cfavorite ham, diced

1 Tbspbacon grease or olive oil

1 tsptabasco chipotle pepper sauce

1 csharp cheddar, grated

2 ozcream cheese, softened

2 Tbspunsalted butter
-
2 Tbsphoney or sorghum molasses
How To Make sweet & savory summer grits

1Bring first 4 ingredients to a slight boil in a sauce pan.

2Add grits, stir, cover, and reduce heat to low until liquid is absorbed - 30 minutes to one hour total time. STIR OFTEN.

3As grits begin to cook, saute onion and ham in bacon grease until the onions are soft and slightly browned. Add mixture to the grits.

4When grits are about 5 minutes from the thickness that you prefer, add the next 4 ingredients and incorporate completely. Allow grits to finish cooking.

5Ladle grits into bowls and drizzle with honey or sorghum molasses. Serve hot with sliced summer tomatoes.
