Growing up in Texas where cattle is raised, ground beef is the most affordable cut of meat. My family learned many different ways to stretch out our meal. This recipe is a wonderful blend of ground beef, onions, and potatoes.

We never had a taco like these Picadillo ones before and they're fantastic. In doing research, we learned there are different versions of Picadillo, and this version made with ground beef, tomatoes, and potatoes is similar to a northern Mexican one. Seasonings include cumin, coriander, garlic, and a bay leaf which add a lot of flavor to the ground beef. This is a very economical meal and a great twist for taco night. We served ours with cheese and a little taco sauce. It was delicious.

Ingredients For picadillo taco

  • 1/2 lb
    lean ground beef
  • 1/4 c
    diced onion
  • 1/4 tsp
    ground cumin
  • 1/2 tsp
    ground coriander
  • 1/4 tsp
    garlic powder
  • 1
    bay leaf
  • 1/2 c
    Rotel diced tomatoes and green chilies
  • 1 Tbsp
    olive oil, extra virgin
  • 1 c
    raw diced potato
  • 1 tsp
    minced garlic
  • salt and pepper, to taste
  • 1/2 c
    beef stock

How To Make picadillo taco

  • Browning ground beef with onions and garlic.

    In a medium heated skillet add olive oil, onions, and garlic. Saute until slightly translucent. Add ground meat. Cook until ground meat is done.
  • Beef stock, Rotel, and potatoes added to the ground beef.

    Add beef stock, Rotel, and potatoes. Turn heat to low and simmer for 5 minutes.
  • Seasonings added to the beef and potatoes.

    Add coriander, cumin, garlic powder, and bay leaf. Cook for 10 mins or when the potatoes are completely tender, not mushy. Remove bay leaf.
  • Warming a tortilla in a skillet.

    Warm up tortilla, add filling, and serve.
