I make breakfast every morning for my teenager son. I make these so he can grab and eat on his way out the door.

Ingredients For on the go breakfast biscuit

2 or 3biscuits,i make a batch on sunday to have for the week

1 Tbspbutter

4 or 5jalapeno pepper rings, the nacho kind, chopped

2 lgeggs
-
1/2 ccheddar cheese, shredded
-
1 tspemirls esscence or creole season
-
2-3 sliceof cooked bacon, or your favorite breakfast meat (optional)

dab of grape jelly
-
dab of yum-yum sauce or honey mustard
How To Make on the go breakfast biscuit

1In a small bowl whisk eggs with salt and pepper, add a tablespoon water.(you can use some of the juice from the jar of the jalapeno). Whisk again. Mix the emirls essence and cheese until cheese is well coated.

2In a non-stick pan heat butter on med to med-high heat. Add the jalapenos and cook until fragrant. Pour in the eggs and prepare a omelete. Sprinkle cheese and fold over. Remove from heat. Divide the omelete into 2-3 sections.

3Slice the biscuit in half. On one side put a dab of grape jelly, then bacon. Top with one of the egg section. Add a dab of Yumm-Yumm, or honey mustard sauce. Top with the other half of the bicuit piece.

4Wrap each biscuit individually in plastic wrap. Microwave ( in the plastic wrap) for 30-40 seconds to reheat.
