There's nothing better than a one dish breakfast meal that feeds the whole family. This scramble is quick and easy. It really fills you up. We loved the smokiness from the sausage and bacon and pop of color from the green pepper and onions. Kicking up the spice with a little bit of salsa was pretty tasty. Great for a weekend breakfast or brunch.

Ingredients For "okie dokie smoky"

  • 5-6
    extra large eggs
  • 1/2
    bell pepper
  • 4-5
    scallions diced
  • 1/2 pkg
    lil smokies
  • 6
    strips of bacon cooked separately
  • 3 tsp
    minced dehydrated onions
  • Accent seasoning salt; to taste
  • Lawrys seasoning salt; to taste
  • pepper; to taste
  • shredded cheese of preference
  • bacon drippings to cook the lil smokies and bell pepper, chives to soften

How To Make "okie dokie smoky"

    Dice your chives. Core and dice your bell pepper.

    Cook your bacon and set aside. Reserve the drippings. Saute the chives, bell peppers and the lil smokies in drippings.

    Add eggs to a bowl and whisk. Add a small amount of water to make your eggs fluffy. Then season your eggs with pepper and salt to taste.

    Add the eggs to the sauteed peppers, chives, and lil smokies, Cook eggs well. When the eggs have cooked, add the reserved bacon. I cut it up, crumbled it and incorporated it to the eggs. Then top with cheese and extra diced chives... Enjoy ;]

    Add salsa and it's breakfast!!! I use Hot Pace Picante. It was a quick, yummy meal.
