Xanthan Gum is a low carb thickening ingredient I buy from Amazon, commonly used in low carb diets replacing flour or cornstarch. It doesn't take much to thicken.   • BISCUITS
  • 1/4 c
    salted butter, melted
  • 3 lg
    eggs
  • 1/3 c
    coconut flour
  • 1/4 tsp
    baking powder
  • 1 1/4 c
    shredded chedder-jack cheese
  • SAUSAGE GRAVY
  • 1/2 lb
    breakfast sausage
  • 1/2 c
    chicken broth
  • 1/3 c
    heavy cream
  • 2 Tbsp
    cream cheese
  • 1/2 tsp
    xanthan gum
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper

How To Make keto southern biscuits & gravy-the low carb way

    Preheat oven to 400. I use a silpat mat, or you can use parchment to line your baking pan or cooie sheet. Set aside.

    To make biscuits, combine all ingredients in a large bowl and stir by hand. Scoop 9 equal portions of dough onto prepared pan. I use a small cookie dough scoop.

    Bake 15-17 minutes while making sausage gravy.

    To make the sausage gravy, Cook sausage over med high heat in a skillet, breaking up pieces with a wooden spoon. Don't drain. Add the chicken broth, cream, cream cheese and xanthan gum. Stir and cook on medium until thickened. Add salt and pepper. Serve over warm split biscuits.
