2 cfrozen potatoes, diced or shredded

1/2 cchopped onion

1/4 mdgreen bell pepper, cut into 1-inch strips

1/4 mdred or yellow bell pepper, cut into 1-inch strips

2 tspoil

12 ozspam, cut into julienne strips

4eggs, or egg product substitute
-
1/4 tspdried basil
-
1/8 tspsalt
-
1/8 tsppepper
-
hot sauce, to taste

1/4 ccheddar cheese, shredded
How To Make hearty spam breakfast skillet

1In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.

2Add spam; cook and stir 5 minutes.

3In small bowl, combine eggs, basil, salt, pepper, and hot pepper sauce; blend well.

4Pour over mixture in skillet. Cover. Cook over medium-low heat 8-12 minutes or until set.

5Sprinkle with cheese; remove from heat.
