After a holiday we always have plenty of leftovers. Trying to figure out different things to do with them can be a challenge sometimes. I took what was left in the fridge and made up some ham and cheese biscuits for a quick "grab and go" breakfast. These biscuits freeze really well for reheating.

This is a recipe for easy drop biscuits that have a big punch of flavor. These biscuits are not only buttery they are savory too. Each bite has a bit of salt from the ham and sharpness from the cheese. We guarantee you'll have a hard time not eating these. They're very versatile and so good. Serve alongside a bowl of soup, put them out at brunch, or have them handy for a yummy snack. The one trick is to make sure you do not overcrowd the pan when baking.

Ingredients For ham and cheese biscuits

  • 2 c
    buttermilk baking mix, like Bisquick
  • 1 c
    shredded sharp cheddar cheese
  • 1/2 c
    diced ham
  • 2/3 c
    milk
  • 1 1/2 Tbsp
    melted butter

How To Make ham and cheese biscuits

  • Stirring milk into the baking mix, cheese, and ham.

    In a bowl combine the baking mix, cheese, and ham. Stir in the milk.
  • Scooping dough into a greased cast iron pan.

    Using a small ice cream scoop, scoop the mixture into a well-greased iron skillet.
  • Biscuits baked in the oven.

    Bake in a 425-degree oven for 15-17 minutes or until the tops are golden brown.
  • Brushing biscuits with melted butter.

    Remove and brush with the melted butter.
