I can't hardly stand the smell of ground turkey when it is cooking. I do love Jimmy Dean pre-cooked, frozen, ground turkey sausage patties though. It is sometimes difficult to find. My grocery store has ground chicken so I decided to make my own ground chicken sausage patties. I used to work for a butcher at the local farmer's co-op and one of my duties was to make sausage. I used my recipe from working there to make this recipe using chicken instead of pork.

Ingredients For chicken sausage patties

  • 2 lb
    ground chicken
  • 2 Tbsp
    brown sugar, optional, helps it brown and tastes good
  • 1 tsp
    salt, any kind you have
  • 1 tsp
    ground peppercorn, black, mixed or white
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 tsp
    sage, dried
  • 1 tsp
    marjoram, dried
  • 1 tsp
    thyme, dried
  • 1/2 tsp
    paprika, smoked
  • 1/2 tsp
    dried red pepper flakes

How To Make chicken sausage patties

    Place the ground chicken into a large mixing bowl. break it up a bit.

    Add all the spices by mixing them together first. Then sprinkle them over the ground meat as you toss and flip it in the bowl.

    Mix in by hand. Do not over mix... over mixing makes ground meat tough.

    divide the meat in half. then 1/4. then 1/8. then 1/16. You will have 16 pieces.

    gently shape into balls then flatten into patties.

    cook the patties in a skillet over med heat till lightly golden on each side.

    Can be eaten when cooked to 165 degrees.

    These freeze well! Place the uncooked or cooked patties on a sheet, freeze and then transfer the frozen patties to a sealed container to store in the freezer. up to 3 months. cook from frozen no need to thaw.
