Ingredients For strawberry bruschetta (homemade style)

  • 4 slice
    whole wheat bread (thick style)
  • 6 Tbsp
    light brown sugar
  • 1 tsp
    grated lemon zest
  • 2 tsp
    lemon juice
  • 3 c
    strawberries (sliced or diced)
  • 4 Tbsp
    mascarpone cheese (or lowfat cream cheese)

How To Make strawberry bruschetta (homemade style)

    Toast bread in toaster.

    In skillet over high heat, add sugar, lemon zest and lemon juice and cook; stirring constantly, until sugar melts and the mixture begins to bubble (about 30 seconds to a minute). Add strawberries and stir until juice begins to ooze and the strawberries are heated through (about 30 seconds to a minute more). You don't want to over cook the strawberries, you are just trying to heat them enough to get the juices flowing:)

    Spread a tablespoon of mascarpone (or cream cheese)cheese on top of each slice and top with warm berries.
