This is a good snack in the car or on the school bus when you wake up late and don't have time for breakfast or just want a quick healthy snack. I portion into zip lock bags and keep in a canister in the pantry for when we are going on car trips and may not see a good place to get vegan food. or for breakfast when my husband gets up late for work and wants something he can eat in the car or at his desk while he works.

Ingredients For peanutbutter granola

  • 6 c
    dry oatmeal
  • 1/2 c
    wheat germ
  • 1/2 c
    toasted coconut
  • 1/2 c
    sunflower seeds
  • 1/2 c
    raisins
  • 1 c
    vegan margarine
  • 1 c
    peanut butter
  • 1 c
    brown sugar

How To Make peanutbutter granola

  • 1
    Combine oatmeal, wheat germ, coconut, sunflower seeds, and raisins in a large slow cooker.

    melt together butter, peanut butter, and brown sugar. Pour over oatmeal in cooker. Mix well.

    cover. cook on low 1 1/2 hours, stirring every 15 minutes.

    Allow to cool in cooker, stirring every 30 minutes or so, or spread onto cookie sheet. When thoroughly cooled, break into chunks and store in airtight container.
