This is a recipe I developed for the Culinary Quest 2016 Challenge "Pita - Stuff It!" This makes for a delicious breakfast or even a light dessert!!

This is a light and delicious breakfast option. We loved how the cinnamon and sugar mixture makes the pita sweet and crunchy. It's a great compliment to the creamy yogurt and fruit mixture. There is a great combination of fruits stuffed inside. Toasted almonds are a great topping and add that last bit of crunch. A simple but yummy idea!

Ingredients For cinnamon toasted fruit pita

  • CINNAMON & SUGAR MIXTURE
  • 2 tsp
    sugar
  • 1/2 tsp
    cinnamon
  • STUFFING MIXTURE
  • 5 oz
    Greek yogurt, vanilla flavored
  • 4 md
    strawberries, sliced
  • 1 sm
    banana, sliced
  • 1/2 sm
    apple (I use peeled granny smith) diced
  • 10
    grapes, sliced in half
  • 4 tsp
    sliced almonds, toasted
  • PITA
  • 2
    pita pockets, cut in half and split open for stuffing
  • 2 tsp
    butter or olive oil

How To Make cinnamon toasted fruit pita

  • Cast iron skillet on the stove.

    Heat a cast iron griddle or any skillet over medium-low heat.
  • Cinnamon and sugar in a small dish.

    If you don't already have a cinnamon & sugar mixture, then mix the two together in a small dish.
  • Sprinkling cinnamon sugar on top of bread.

    Butter/oil both sides of the 4 pitas. Sprinkle each side with 1/4 tsp of the cinnamon mixture.
  • Heating bread in cast iron skillet.

    Place all 4 pitas on pre-heated griddle/skillet. Cook until nicely browned, about 3-5 mins.
  • Grilling other side of bread in cast iron skillet.

    Then flip to the other side and repeat.
  • Yogurt, strawberries, bananas, grapes, and bread on a cutting board.

    While pitas are browning/toasting, clean and slice all the fruits.
  • Fruit in a mixing bowl.

    Add to a bowl, mix until well combined.
  • Spreading Greek yogurt into pita.

    Let the pitas cool and then spread 1-2 tablespoons of the Greek yogurt inside the pita.
  • Adding fruit to pita.

    Fill with fruit.
  • Sprinkling almonds on top of fruit.

    Sprinkle the toasted almonds. Enjoy.
  • Toasting almonds in a pan.

    TIP: If you need to toast your sliced almonds, put them on a small pan and put them in a pre-heated oven or toaster oven for about 4-5 minutes, until lightly browned.
