Ingredients For blackberry-peach coffee cake

  • STREUSEL TOPPING
  • 1/2 c
    butter, softened
  • 1/2 c
    granulated sugar
  • 1/2 c
    brown sugar
  • 2/3 c
    all purpose flour
  • 1 tsp
    cinnamon
  • 1/2 tsp
    ground nutmeg
  • COFFEE CAKE
  • 1/2 c
    butter, softened
  • 1 c
    sugar (may use 1/2 brown sugar)
  • 2 c
    all purpose flour
  • 2
    eggs
  • 2 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 2/3 c
    sour cream
  • 2 tsp
    vanilla extract
  • 2
    large peaches, sliced (ripened)
  • 1 c
    fresh blackberries (rinsed and dried)
  • powdered sugar

How To Make blackberry-peach coffee cake

    Preheat oven to 350 degrees. Prepare Streusel by mixing together until of crumb consistency. Set aside.

    Beat butter and sugar; add eggs one at a time. Combine flour, salt, and baking powder. Add alternately with sour cream. Stir in vanilla. Pour a batter into 9” springform pan. Top with fruit and then crumb mixture. Bake at 350? for 1 hour and 10 min. (toothpick inserted in center will NOT come out clean because fuit keeps it very moist). Center of cake should be set. Cool completely and dust with powdered sugar.
