This is wonderful as a breakfast or lunch or anytime. You can also use a round cake pan if you dont have an iron skillet.This makes one pancake.

How To Make baked pancake and fruit

1In 425 degree oven melt butter in cast iron skillet or round baking pan.

2In bowl combine eggs, milk and flour and beat until foamy.

3Pour into hot skillet and bake at 425 degrees for 17-22 minutes till golden.

4Top with fresh fruit. I have used strawberries,kiwi,blckberries,grapes,and a peach all together. Can sift powdered sugar on top.
