I made these last weekend for my fussy grandkids and they loved them, especially the syrup! Give this recipe a try some weekend, you'll fall in love too!

Ingredients For apple-bacon filled pancakes w/ cider syrup

1/2 tspoil, i used vegetable oil

1/2 capple cider

3 Tbsppacked light brown sugar

1-1/2 tsplemon juice

1-1/2 tspcornstarch

1/2 cwhole wheat pastry flour

1/4 cplus 2 tbsp white flour

1 tspbaking powder
-
1/4 tspbaking soda
-
1 lgegg
-
1 lgegg white
-
1/2 clow fat buttermilk
-
1 lgapple, peeled, diced
-
4 slicecenter cut bacon, cooked, cooled and crumbled
How To Make apple-bacon filled pancakes w/ cider syrup

1In small pan, over medium heat, combine cider, 2 tbsp brown sugar, lemon juice and cornstarch. Bring to a boil, whisking constantly until thickened. Set aside.

2In medium bowl, combine whole wheat flour, white flour, baking powder, baking soda and 1 tbsp brown sugar, mix to combine. In lg bowl, Whisk egg, egg white and buttermilk until combined. Whisk dry ingredients into wet ingredients. Stir in diced apple and bacon.

3heat oil in lg skillet, over medium-high heat. Scoop 1/4 cup batter into skillet. Cook until bubbly, flip and continue cooking until light brown. Reheat syrup and serve over pancakes.
