yummy egg cups

While preparing for bariatric surgery, I came across the concept of egg cups. I tried lots of different recipes. Ended up combining what I liked from several of them, added some twists of my own, and came up with these. My whole family loves them! Very flavorful, can be low in calories and is low in carbs! All three very important for bariatric eating!

Ingredients For yummy egg cups

  • 4 lg
    eggs
  • 6 slice
    deli ham, chopped
  • 1/2 c
    cheddar cheese, shredded, can be low fat or fat free
  • 1
    green onions, chopped
  • salt and pepper to taste
  • 1/2 c
    frozen spinach, defrost and squeezed dry
  • 2 dash
    hot sauce

How To Make yummy egg cups

  • 1
    Beat eggs. Stir in remaining ingredients.
  • 2
    Spray silicone egg mold with non stick spray.
  • 3
    Add egg mixture to each mold until almost to the top.
  • 4
    Cook in air fryer at 360 for 12 minutes. Remove from mold and enjoy!
