Ingredients For veggie omelet

4eggs

3 Tbspmushrooms, chopped

2 Tbspgreen pepper, or any color, chopped

1 Tbsponion, chopped

2 Tbspshredded cheese, any variety

pan spray

salt, pepper, seasoned salt, to taste

2 Tbspsalsa, to serve

fresh parsley, as garnish
How To Make veggie omelet

1Spray skillet. When hot, add veggies. Saute until onion starts to soften.

2Beat eggs lightly and add to sautéed veggies. Season with salt and pepper or seasoning of your choice.

3Push eggs from edges as they set - in other words, make an omelet! OR just scramble eggs and veggies together.

4When almost set, sprinkle with shredded cheese. Turn off heat, cover pan until cheese melts.

5plate the eggs either as 1/2 omelet or per person or 1/2 of the scrambled eggs. Top with salsa and parsley.
