i needed somethin to eat and a break from finishin up my bell peppers and came up with this i'm eatin it as i type yummy...

Ingredients For veggie egg scramble

  • 1/2 sm
    red onion,chopped fine
  • 1 Tbsp
    green bell pepper,chopped extra fine
  • 4-6 md
    botton mushrooms,rough chop
  • 1 tsp
    margarine
  • 2 lg
    eggs
  • 1 slice
    garden fresh tomato,chopped
  • 1 oz
    swiss cheese,cubed

How To Make veggie egg scramble

  • 1
    in small cast iron fry pan put margarine let melt than add onion and pepper cook til onion starts to get limp then add mushrooms cook til mushrooms get tender
  • 2
    now crack both eggs into a sm bowl do not mix pour right into veggies now start stirrin and also turn pan temp to low cook and stir til eggs are set and dry

    now turn pan off and add cheese and tomato stir well leave in pan til cheese melts and tomato is warm
  • 4
    now serve and enjoy [ i had a big ole glass of diet v-8 splash tropical blend with it]
