For some reason, I'm one of those weird people that happen to love spam. I can eat it right out of the can. I decided to create this recipe to entice those who absolutely hate spam to give it a try. I entered this recipe in the Spam Meal Makeover Challenge "Brunch" I dont think I have a chance to win, I got started way to late in the game for votes. None the less I really enjoyed reinventing spam. Happy Cooking. sw:)

1 canspam® oven roasted turkey, cut into 8 slices

1 lggreen tomato, cut into 4 slices

1/2 ccup buttermilk

1 ccup self-rising yellow cornmeal

2 Tbspseasoning salt, divided

1/4 cbacon grease
-
2 Tbspfresh basil, chopped

1 Tbspgranulated garlic
-
4 Tbspextra-virgin olive oil, divided

1 lgonion, sliced

4 lgeggs

1 Tbspchives
-
8 ozgrape tomatoes

pepper, to taste

1Heat oven to 450°F. In medium bowl, combine green tomato slices and buttermilk. In separate bowl, combine cornmeal and 1 tablespoon seasoning salt; mix well. Dredge tomato slices in cornmeal mixture. Heat skillet; add bacon grease. Fry coated tomato slices in hot bacon grease, flipping once, until golden brown. Drain on paper towels.

2In clean medium bowl, combine grape tomatoes, basil, garlic, 1 tablespoon oil and the remaining 1 tablespoon seasoning salt. Place on baking pan; roast 10 minutes or until tomatoes begin to burst.

3In large frying pan or on griddle, heat 1 tablespoon oil. Add onion; fry until translucent. Remove from pan. In same pan, fry SPAM® Oven Roasted Turkey, turning once, until golden brown; remove from

4In same pan, heat remaining 2 tablespoons oil. Add eggs; cook until fried sunny-side-up. Sprinkle with chives and pepper. On each of 4 heated plates, place 1 fried green tomato, 2 slices SPAM®, 1/8 each of grape tomatoes and onion, 1 egg and 1/8 each of grape tomatoes and onion.
