Ingredients For the great egg sandwich

  • 1
    egg
  • 2 slice
    cappricola or round ham or bacon
  • 1
    crimini mushroom, sliced (a crimini is also known as a baby bella)
  • 2 Tbsp
    butter
  • 1 clove
    garlic, minced
  • mozzarella cheese
  • 2 slice
    bread or english muffin
  • 1-2 Tbsp
    mayonnaise

How To Make the great egg sandwich

  • 1
    Spread mayonnaise onto bread or English Muffin. Place 1 Tbsp butter into warm, small frying pan. Saute mushroom in butter until almost tender.

    Add garlic & finish mushroom till tender & garlic is fragrant. Remove from pan.

    Add remaining Tbsp of butter into pan. Lay 1 slice ham or bacon in pan. Break egg over the ham slice, breaking & slightly stirring the egg yolk.

    Add mushroom/garlic saute back on top of the egg. Top with mozzarella & second ham slice.

    Flip egg/ham combo as best you can & let fry on the other side for 45-60 seconds. Flip egg/ham filling out onto prepared bread & enjoy!

    Chef's Note: You can use ham, bacon, or your favorite meat here. The congealing of the cooked egg & the melting cheese functions to hold everything together. If you use bacon & like it crispier, par-fry it like the mushrooms. If you do this, you can use the bacon fat in place of the butter in the pan.

    Variations: Get creative! Try adding some veggies like peppers & onions; some herbs like basil or dill; change up the cheese to Swiss or Gouda (any creamy melting cheese). You can also turn the filling out onto bread buttered on the OUTSIDE & turn it into a Great Grilled Cheese & Egg Sandwich!
