Ingredients For sweet potato hash

  • 1 Tbsp
    olive oil
  • 1 md
    sweet potato
  • salt and pepper, to taste
  • 2
    eggs
  • 4 oz
    slice of ham
  • butter, for pan
  • sriracha, to taste
  • parsley, for garnish

How To Make sweet potato hash

    Peel and shred the sweet potato.

    Heat a cast iron (or other) pan over medium heat and swirl in the olive oil. Add shredded potatoes in a single layer, season with salt and pepper. Flip occasionally and cook until potato are browned. Cover and keep warm.

    Heat a frying pan over medium heat, add some butter. Lower heat and add eggs. Cover and let eggs cook until whites are set - a couple minutes.

    While eggs set, cook ham slice in another pan until warmed. Flip so both sides will get somewhat crispy.

    To serve - plate sweet potatoes, top with eggs. Serve ham on the side and sprinkle with parsley and sriracha, if desired.
