Ingredients For sweet potato hash

1 Tbspolive oil

1 mdsweet potato

salt and pepper, to taste

2eggs

4 ozslice of ham

butter, for pan

sriracha, to taste

parsley, for garnish
How To Make sweet potato hash

1Peel and shred the sweet potato.

2Heat a cast iron (or other) pan over medium heat and swirl in the olive oil. Add shredded potatoes in a single layer, season with salt and pepper. Flip occasionally and cook until potato are browned. Cover and keep warm.

3Heat a frying pan over medium heat, add some butter. Lower heat and add eggs. Cover and let eggs cook until whites are set - a couple minutes.

4While eggs set, cook ham slice in another pan until warmed. Flip so both sides will get somewhat crispy.

5To serve - plate sweet potatoes, top with eggs. Serve ham on the side and sprinkle with parsley and sriracha, if desired.
