This is one of my favorite omelets. The kids prefer the Cheddar cheese,but sometimes my husband and I will substitute it with Feta. Either way....it's delicious.

Ingredients For spinach & mushroom omelet

1egg
-
3egg whites
-
1 Tbspshredded cheddar cheese (can use reduced fat)

1 Tbspgrated parmesan cheese

1/4 tspsalt
-
1/8 tspred pepper flakes
-
1/8 tspgarlic powder
-
1/8 tspground nutmeg
-
1/8 tsppepper
-
1/3 tspolive oil
-
1/2 csliced mushrooms
-
1/4 cgreen onion, diced
-
2 Tbspred bell pepper, finely chopped

1 cfresh spinach
-
1/2 ctomato, diced
How To Make spinach & mushroom omelet

1Whisk both the egg and egg whites together. Add the parmesan cheese, cheddar cheese salt, red pepper flakes, garlic powder, nutmeg and pepper to the eggs and mix well.

2Add the olive oil to your pan and heat over medium heat. Combine mushrooms, green onion and bell peppers and cook until tender.

3Add the spinach to the pan and cook until it's wilted.

4Next, add the tomatoes and egg mixture, cook completely and enjoy!
