How To Make skillet potato brunch - cass's
-
1Gather ingredients..always makes things easier. Cook bacon, drain, set aside
-
2In a 12 inch skillet ( ovenproof preferable..I use my iron skillet) cook potatoes in oil and a little of the bacon grease, over medium - high heat, for 10 - 15 minutes or until golden brown, stirring occasionally. Season with garlic powder.
-
3Add the onions, parsley and garlic; cook until tender. Reduce heat to medium.
-
4In a bowl, beat eggs, water, salt and pepper. Add the ham to the potatoes, heating through.
-
5Pour the egg mixture over the potatoes; sprinkle the bacon crumbles and parmesan evenly over the eggs, cover and cook 10 - 15 minutes until almost set
-
6When almost set, I placed the pan under the broiler to finish cooking the eggs. Watch not to burn. About 3 minutes.
-
7Cut into wedges and enjoy the flavors of the bacon, ham, garlic and potatoes..this is even better a few hours later, after all the flavors merry together.. Serve with sour cream of desired.
