I wanted to clean out the fridge and use up some potatoes this morning..this was delicious..kids said make it anytime ...LOL!..who can resist fried taters, ham and bacon? My pics.

Ingredients For skillet potato brunch - cass's

  • 2 - 3 md
    potatoes, peeled and cubed
  • 1/2 c
    diced, red onion or whatever you have...have used green onions
  • 1/4 c
    olive or vegetable oil
  • 1/3 c
    fresh parley, or dried will do
  • 6
    eggs
  • 1/4 c
    water
  • 2 slice
    bacon, cooked crisp and crumbled
  • 2 - 3 slice
    cooked deli ham ( i use virginia baked) any ham will do..cut up in bite sized pieces
  • salt and pepper
  • 1/2 tsp
    garlic powder
  • 1 clove
    garlic, minced
  • 1 Tbsp
    shredded parmesan cheese

How To Make skillet potato brunch - cass's

    Gather ingredients..always makes things easier. Cook bacon, drain, set aside

    In a 12 inch skillet ( ovenproof preferable..I use my iron skillet) cook potatoes in oil and a little of the bacon grease, over medium - high heat, for 10 - 15 minutes or until golden brown, stirring occasionally. Season with garlic powder.

    Add the onions, parsley and garlic; cook until tender. Reduce heat to medium.

    In a bowl, beat eggs, water, salt and pepper. Add the ham to the potatoes, heating through.

    Pour the egg mixture over the potatoes; sprinkle the bacon crumbles and parmesan evenly over the eggs, cover and cook 10 - 15 minutes until almost set

    When almost set, I placed the pan under the broiler to finish cooking the eggs. Watch not to burn. About 3 minutes.

    Cut into wedges and enjoy the flavors of the bacon, ham, garlic and potatoes..this is even better a few hours later, after all the flavors merry together.. Serve with sour cream of desired.
