Ingredients For sizzled eggs, ma

1 cchopped tomatoes

1 Tbspchopped fresh basil

coarse salt & freshly ground black pepper

1/4 cbutter
-
8eggs, beaten
-
olive oil
-
fresh grated parmesan
How To Make sizzled eggs, ma

1In small bowl combine tomato and basil. Season to taste with S&P, toss to coat and set aside.

2Heat large skillet over high heat. Add butter, heat until hot and just begins to smoke and darken. Pour in eggs all at once. Cook stirring gently, about 30 seconds or until just barely set (Eggs should still look wet on surface).

3Immediately transfer to 4 warm dinner plates. Sprinkle with S&P to taste, drizzle with olive oil and top with tomato mixture. Pass parmesan at table.
