This is one of my favorite breakfast dishes when we tire of the usual breakfast fare. It makes a great lunch and quick supper. Shakshuka is a mid eastern dish. It is a lot like chili....add the spices you like...cumin, jalapeno, bell peppers or what ever you like. Play with it. Try it. It is my favorite use of fresh garden tomatoes when they start flooding in.

Ingredients For tina's super shakshuka

  • 1 Tbsp
    olive oil
  • 1
    onion, diced
  • 2 clove
    garlic, minced
  • 1/2 tsp
    crushed red pepper
  • 1/2 tsp
    ground cinnamon
  • 1/2 tsp
    ground cloves
  • 1/2 tsp
    ground allspice
  • 28 oz
    crushed or diced tomatoes
  • 1/2 tsp
    sugar
  • 4-6
    eggs

How To Make tina's super shakshuka

    In large sauté pan sauté onion until translucent.
  • 2
    Add spices to pan to bloom in oil for about 30 seconds.

    Add tomatoes along with liquid to pan. Cover and simmer 20 minutes.

    With the back of a spoon make a nest in the tomatoes and gently crack an egg in the nest. Continue with the remaining eggs. Cover and poach gently until eggs are done to you liking. Add salt and pepper and serve.
