My dad used to make this on Saturday mornings as our special treat. My husband loves this recipe. We have it on special mornings for brunch. You can also add mushrooms, olives, etc. to suit your taste. I like it with a big slice of fresh tomato out of the garden in the summer time. Hope you enjoy it as much as we do.

Ingredients For scuddlebut

1 lgpotatoe, grated

3 mdturkey sausage patties, chopped

1/4 conion, chopped

1/4 cbell pepper, chopped

4 lgeggs, scrambled

1/8 tspsalt

1/8 tsppepper

1 Tbspbutter

1 cancooking spray

1/4 cmonterey jack cheese, grated

1 Tbspcanola oil

How To Make scuddlebut

1Spray skillet with cooking spray. Brown turkey sausage just until pink is gone.

2Put one Tablespoon oil in skillet and add grated potatoe, onion, and bell pepper. Cook until potato is done.

3Add butter to skillet. Poor scrambled eggs over potatoes and sausage mixture.

4Salt and pepper to taste. Cook over med-low heat until eggs are set.

5Reduce heat and add cheese on top. Cover and let set until cheese is melted. Serve while warm with your favorite salsa.
