This is the easiest recipe but everyone says "wow" when they see it. And they're even more impressed when they taste it! It's certainly one of my favorites. Individually serves four of your favorite breakfast or brunchgoers and is easily multiplied. My mother-in-law taught me this one, and she is a 5-star chef in Barbados!

Who knew something so simple could be so delicious? These baked eggs are simple to make. Since they are served in individual ramekins, they are impressive when served. The eggs are cooked in a thick cream for richness. As you dig in, gooey fresh mozzarella cheese is a nice surprise. Then you get to the smoky pieces of bacon. An easy and delicious treat for a holiday breakfast or brunch.

Ingredients For puddin place eggs

  • butter
  • 4 slice
    bacon, cooked and cut in pieces
  • 4 slice
    fresh mozzarella, cut in pieces
  • 4 lg
    eggs
  • 1 c
    heavy cream
  • salt, to taste
  • pepper, to taste
  • paprika, to taste (optional)

How To Make puddin place eggs

  • Lightly butter ramekins.

    Preheat oven to 375 degrees F. Lightly butter the ramekins.
  • Put bacon and mozzarella in the ramekin.

    Put bacon in a circle around the edges and add mozzarella on top of bacon.
  • Add an egg to the ramekin.

    Gently add egg to the center without breaking the yolks.
  • Spoon cream over the eggs.

    Gently spoon about 1/4 c cream over each egg.
  • Sprinkle with salt, pepper, and paprika.

    Salt and pepper lightly. Sprinkle with paprika.
  • Bake the eggs.

    Bake in the oven for about 20-25 minutes.
  • Eggs should slightly shake when baked.

    Center should "shake" but not "swim."
