Ingredients For pesto avocado toast with fried egg

  • 1 slice
    brioche bread
  • 1 Tbsp
    pesto
  • 1 lg
    egg
  • 1 Tbsp
    olive oil
  • 2 Tbsp
    ricotta cheese
  • 1/2
    avocado
  • salt and pepper
  • a drizzle of honey

How To Make pesto avocado toast with fried egg

  • 1
    Toast the bread then spread the ricotta over the top. Smash the avocado with a fork and season with salt and pepper. Spread over the ricotta
  • 2
    In a frying pan add the olive oil. Stir in the pesto and crack the egg into the pan and cook until the egg is doen but the yolk is still runny.

    Place the egg on top of the toast and drizzle with a little honey.
