on-the-fly breakfast casserole with mushrooms

Had some good friends stop over Sunday morning… Did I say it was unexpected? Went into the walk-in and found some eggs, Cremini mushrooms, milk, and several different varieties of cheese… I think it’s egg casserole time. So, you ready… Let’s get into the kitchen.

Ingredients For on-the-fly breakfast casserole with mushrooms

1 Tbspolive oil

1 Tbspsweet butter, unsalted

10 ozcremini mushrooms, thickly sliced

8 lgfarm fresh eggs

1 1/2 cfresh whole milk
-
1 ccheddar cheese, freshly shredded

1 ccolby cheese, freshly shredded

1 pinchcayenne pepper, or to taste
-
1 pinchpaprika, or to taste
-
salt, kosher variety, to taste
-
black pepper, freshly ground, to taste

dill, freshly chopped, for garnish
How To Make on-the-fly breakfast casserole with mushrooms

1PREP/PREPARE

2Chef’s Note: I don’t have my usual amount of photos for this one, but I think you have enough to get the idea.

3Gather your ingredients.

4Place a rack in the middle positions, and preheat the oven to 350f (175c).
-
5Shred the two cheeses, and reserve.
-
6Clean and stem the mushrooms, then thickly slice.
-
7Add the butter and olive oil to a sauté pan over medium heat.
-
8When the foaming subsides, add the mushrooms.
-
9Cook until they have lost most of their moisture, and are golden brown, about 15 to 18 minutes. Allow to cool, and reserve.

10Add the eggs to a large bowl and whisk together.

11Add the milk, salt, pepper, cayenne, and paprika, and whisk to combine.

12Add the cheese, and then stir together.
-
13Finally add the mushrooms and stir to combine.

14Pour the mixture into a baking dish, cover with foil and place in the preheated oven.

15Allow to bake, covered for 20 minutes.

16Remove the cover, and continue to bake for an additional 20 minutes.

17Remove from the oven and let rest for 10 minutes.

19Sprinkle some freshly chopped dill on top, and severe with some hash browns, and possibly crispy bacon. Enjoy.
