Ingredients For omelettes w/ artichokes

    6 oz jar marinated artichoke hearts
  • 1/2 c
    red onion, cut into thin wedges
  • 1/2 c
    green bell pepper, cut into bite-size pieces
  • 1/3 c
    cooked, deli ham, cut into 1/2"-pieces
  • 4
    eggs
  • 1/4 c
    water
  • 1/2 tsp
    each salt and pepper
  • 1 Tbsp
    butter

How To Make omelettes w/ artichokes

    Drain artichokes, rserving 2 tbsp liquid. In bowl, combine artichokes, onion, green pepper and ham. Toss w/ reserved liquid to coat.

    Spray a lg skillet w/ cooking spray, place over med-high heat. Add artichoke mix to skillet. Cook over medium heat, stirring for about 8 mins. Remove from heat.In lg bowl, combine eggs, water, salt and pepper. Whisk until frothy.

    Heat a lg skillet med-high heat. Add butter. Melt and swirl to coat pan. Add egg mix to skillet. Reduce heat to medium. Stir egg mix gently for 1-2 mins. Stop stirring and cook until eggs are set. Spoon filling onto one 1/2 of omelette. W/ spatula, lift and fold opposite side of omelette over filling. Invert onto plate and gently cut into 2.
