"not yo mommas" breakfast
Raising 6 children as a single parent, often our personal tastes get lost in the sea of "I don't like that". You just have to work at making sure things are cooked generic enough to make everyone happy! Now that I live alone, I have become a little 'sassy' and say "This is how I like it!" LOL...great little breakfast with an explosion of flavors in you mouth to wake you up in the morning!

Ingredients For "not yo mommas" breakfast

3 to 4 slicebacon, cut in half
- "SMASHED" BROWNS...

fat rendered from cooking bacon

1 mdpotato, small cubes

1 Tbsponion, minced

1 tspgarlic, minced

1/2 tspginger, finely grated

2 smfresh basil leaves, finely chopped

1 dashfresh cracked pepper
- EGGS...

1 Tbspcoconut oil

2 lgeggs

1 tspmayonnaise

1 tspmilk

1 dashfreshly cracked pepper
- TOAST...

1 slicegarlic parmesan french bread

How To Make "not yo mommas" breakfast

1Bacon... Fry the bacon to your personal liking, I like mine brown and crispy. Place on plate, cover and save the fat...

2"Smashed" Potatoes... Put the potatoes in the rendered fat from the bacon and sprinkle the seasonings on top. Cover and fry over medium heat, turning several times for about 10 minutes.

3Take the cover off and 'smash' the potatoes around some with a fork, cooking enough to crisp them up. Place with the plated bacon with cover to keep them warm.

4Eggs... Put the coconut oil in the same pan over low/medium heat. Combine rest of ingredients with a fork until mixed well and frothy. Pour into heat pan with coconut oil and cook stirring slightly and lightly. Take the eggs out BEFORE they look done, they will firm up a good bit.

5Toast... Toast your garlic parmesan slice and slather with your favorite butter! Note, notice no salt added, the bacon is salty, mayo slightly salty and the French bread if from the store has salt in the topping, easy about salting, taste first! Enjoy...
