This recipe was invented by my mother as a quick way to get us fed when we were children. I made it for my girlfriends when I lived in Chicago and they made a video of me recreating it in the kitchen so they, too, could remember how to do it. (It's so easy but they thought boiling water was hard to do) It remains one of the most satisfying things to eat...especially if I feel ill or just crave a comforting food.

Ingredients For momma's poached eggs over toast

2eggs, poached

2 slicebread, toasted

1pat of butter

salt and pepper to taste
How To Make momma's poached eggs over toast

1Take 2 slices of bread and toast them. Tear toast into bite-size pieces and put in a cereal bowl. Add pat of butter on top.

2Take 2 eggs and poach them. (You will want the egg to have some of the runny yolk so don't over poach!)

3Put the poached eggs over the butter and toast. Cut the eggs up into smaller pieces and the yolk will run over the toast. Mix it up thoroughly so all toast pieces have some of the melted butter and whites and yolk on them.

4Salt and pepper to taste.
