This made a lot of meat filling. The egg/meat mixture made approximately 6 medium sized burritos. I had meat filling (meat & veggies) left over that I'll make a quiche with this week.

Ingredients For meat lovers breakfast burrito

  • 1 lb
    italian sausage (i like jimmy dean)
  • 6 slice
    canadian bacon, cut into bite sized pieces
  • 6 slice
    cooked bacon, crumbled or cut up
  • 2 1/2 oz
    pepperoni, quartered into bite sized pieces
  • 8 lg
    eggs
  • 1 Tbsp
    red pepper flakes
  • 1 Tbsp
    my seasoning (i use equal amts. garlic powder, onion powder, salt & pepper)
  • 1 c
    shredded cheddar cheese
  • 1/2 lg
    green pepper, chopped
  • 1/4 lg
    onion, chopped
  • salsa, sour cream, avocado, black olives, taco sauce
  • whole wheat tortillas

How To Make meat lovers breakfast burrito

    To skillet add sausage, canadian bacon, onions & green peppers, cook together. Once sausage is done, throw in bacon and pepperoni. Let cook til sausage is done and all is heated thoroughly. Add in red pepper flakes & seasoning.

    In another skillet, spray with pam and scramble 8 eggs along with the cheddar cheese and cook until almost done. Spoon in (with a slotted spoon to eliminate some of the grease) as much of the meat mixture as you like. Once well combined, spoon onto heated whole wheat tortillas. Add salsa, avocado, sour cream or whatever you enjoy on your burrito! Enjoy!
