california omelette with guacamole filling
This was an orphan recipe which I adopted. I love guacomole and found this omelette terrific when I tried it. I added optional toppings that I think make it even better.

Ingredients For california omelette with guacamole filling
- GUACAMOLE:

1avocado, peeled

1 Tbsplime juice
-
1/4 cfinely chopped onion

2 Tbspfinely chopped cilantro

1 lgtomato, chopped
-
1 pinchred pepper flakes, to taste
- OMELETTE:

4eggs
-
2 Tbspmilk or cream
-
sea salt and freshly ground black pepper to taste
- OPTIONAL TOPPINGS:
-
fresh salsa
-
avocado slices
-
sour cream
-
cheddar cheese
-
fresh cilantro
How To Make california omelette with guacamole filling

1In small bowl, mash avocado until chunky. Add lime juice, onion, cilantro, and tomato. Add red pepper flakes to taste. Mix well.

2Mix eggs, milk, salt and pepper. Beat briskly. Pour into hot nonstick skillet or omelet pan. Stir with circular motion while shaking pan vigorously over heat. Stir until eggs begin to set. Let stand 2 to 3 seconds and shake pan. Omelet should move freely.

3Spoon avocado mixture over half of omelet. Slip broad spatula under omelet and fold in half carefully. If using cheese as a topping add before removing from pan and allow cheese to melt. Serve immediately with the toppings you choose.
