This is such a wonderful tasting egg dish and so easy to make. It's great for a group or potluck and works well for breakfast, brunch, lunch or even dinner! I like it with a little salsa and lite sour cream on the side to serve on top and you could also add cubed cook ham to this if desired.

Ingredients For green chili egg dish

  • 10
    eggs
  • 1/2 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 pt
    cottage cheese, lowfat
  • 1/2 lb
    jack cheese, shredded
  • 8 oz
    (two 4 oz cans) diced green chilis
  • add fresh black pepper to taste

How To Make green chili egg dish

  • 1
    Beat eggs til light and fluffy. Add flour, baking powder, salt and fresh black pepper. Blend well. Stir in green chilis, cottage cheese and cheese. (Note: You could also add some cubed cooked ham to this if you want to.)

    Pour into 9 x 13 baking dish sprayed with cooking spray (or you can use butter if desired) Bake @ 350 degrees for 35 minutes or until top is golden brown and center is set and appears firm. Let set for about 10 min. before cutting into squares to serve. This is good served with salsa and a little lite sour cream on top
