gluten free quiche
I was never a fan of the crust on a quiche so I started using potatoes.

Ingredients For gluten free quiche

2 cshredded potatoes (frozen hashbrowns are ok)

3 Tbspoil, divided

5large eggs
-
1 cgreek yogurt
-
5 slicecooked bacon
-
1 cgrated cheese (i mix cheddar and mozzarella)

1 cchopped veggie (zucchini, broccoli, spinach, etc)

salt and pepper
How To Make gluten free quiche

1Preheat oven to 350, grease a pie pan

2Place 2 T oil in a skillet and cook the potatoes. Add salt and pepper. Remove to the pie pan and pat to cover bottom and sides. If you want less oil, instead of frying, put the potatoes in the pie pan, spritz with spray oil, and bake until you get a little color.

3With remaining 1 T (or less, depends on the vegetable used) of oil saute your vegetable of choice.

4Mix the eggs and yogurt with a whisk until well mixed.

5Add the rest of the ingredients and mix.

6Pour over the crust and bake at 350 for 40-45 minutes.
