Like the recipe title says.... "Gives A Whole New Meaning To Egg Roll !" I made these up when we were trying to use up some egg roll wrappers... We like to make lots of egg rolls of different types instead of buying things from the freezer section of the grocery store! This is a very inexpensive "Egg Roll" to make.... great for breakfasts on the run or when we are just wanting a snack. Don't be afraid to experiment... Play With Your Food! xo

Ingredients For gives a whole new meaning to egg roll !

  • EGG ROLL WRAPPERS
  • 1 pkg
    (16 - 30 per package) egg roll wrappers
  • FILLINGS
  • 2 Tbsp
    butter (for scrambling eggs)
  • 6 lg
    eggs (beaten well with the water)
  • 1/4 c
    water
  • 1/2 tsp
    each: salt and pepper
  • 2 Tbsp
    butter (for saute' of veggies)
  • 1
    each: green and red bell peppers (minced)
  • 1 bunch
    green onions (minced)
  • 1 pkg
    shredded cheddar cheese

How To Make gives a whole new meaning to egg roll !

  • Fluffy Scrambled Eggs

    Beat together well the eggs, spices and water. Cook in a skillet with the butter. The eggs should not be over cooked, they should be moist, fluffy and not browned. Set aside.

    Saute the veggies in butter until just cooked. Do not brown.

    Put a little egg, veggies and cheese on egg roll wrapper. Roll up about halfway, then bring the left and right corners up and fold over. Dampen left and right edges or remaining corner of wrapper with a dab of water. Continue rolling up the egg roll, it should seal easily. Repeat until all are done.

    At this point, either fry them in oil as you would an egg roll, or freeze them on a metal baking sheet, when frozen, put in zipper bags and store in freezer until ready to use.
