farmer's breakfast
This recipe is very versatile. You can add bell pepper, mushrooms, or any veggies you like. You can peel the potatoes or wash and leave the skins on. You can use red, white, yellow or green onions. You can use any meat or meat combo you like, as well as cheese. You can use whatever you have on hand. Great way to use up bits of leftovers. You can top with fried eggs instead of scrambled. You can do a healthy version-use turkey bacon or sausage, cooking spray instead of oil, egg substitute, or top with poached eggs. You can use low-fat cheese. Any and all combos are wonderful when added to the potatoes and onions. Also, it's VERY easy to adjust the amount to feed 2 or a crowd. Also great if you have company and not enough eggs to cook everyone 2-3 eggs a piece. You just scramble in whatever you have and it works.
Ingredients For farmer's breakfast

1 mdonion

1/2 lbbacon, sausage, ham, smoked sauage, canadian bacon, or any meat you like. or any combo of meats.

4 mdpotatoes, large dice

1 ccheese-any kind you want, monterey jack, cheddar, swiss, velvetta, sandwich slices..whatever you like or have on hand, as long as it will melt.

How To Make farmer's breakfast

1Heat a large skillet, add diced onions and chopped up bacon.(or depending on what meat you choose, you may need to add a little oil)

2Once the meat begins to cook, add potatoes. Add S&P, (you may need more or less depending on what kind of meat you choose) cook over medium to med. high heat, stirring often, til potatoes are tender inside and have some color on them.

3Scramble eggs in a bowl, and add to skillet, stirring til eggs are done to your liking..this won't take very long..don't walk away.

4Turn off heat, and add shredded or sliced cheese. You can cover and let it melt on top, or you can stir it in and let it melt all through. Either way is Delicious.

5Serve and watch it disappear.
