My Cousin, Evelyn (from Dallas, N. C.) included directions on making a Broccoli Casserole (end paragraph of Directions).

Ingredients For evelyn's breakfast casserole

  • 1 lb
    hot sausage, or 2 cups chopped ham
  • 4
    eggs, or 6 for a large casserole
  • 1 c
    medium cheddar cheese, grated
  • 6 slice
    bread, crumbled
  • 2 c
    milk, or 4 if a large casserole
  • 1/2 tsp
    salt

How To Make evelyn's breakfast casserole

    Cook sausage or ham until golden brown. Drain all grease off before using.

    Mix sausage (or ham), eggs, milk and salt. Layer bread and cheese. Then pour egg mixture over bread. Continue to layer until you use all ingredients. Bake at 350 degrees for 35 - 45 minutes or until golden brown.

    If you want to make a Broccoli Casserole use: 2 pkgs. of cooked Broccoli, and one can cream of mushroom soup. Use only one cup of milk in making this casserole.
