Ingredients For eggs in purgatory

1 Tbspolive oil

1 smonion diced

2 clovegarlic minced

1 ctomato sauce

1/2 tspred pepper flakes

1 tspsalt

1/2 tspblack pepper

3 Tbspfresh parsley chopped

4 lgeggs

1/4 cgrated parmesan cheese
How To Make eggs in purgatory

1Pour oil in skillet over medium heat. Saute the onions about 3 minutes. Add the garlic and saute another minute. Stir in the tomato sauce, red pepper flakes, salt and pepper.

2Cook about 5 minutes allowing the sauce to thicken. Push the sauce to the side and break in an egg. Do this for all the eggs. Place a cover over the pan and cook until whites are done.

3Remove cover and sprinkle with parsley and parmesan cheese.
