This is a spicy easy dish that you can have ready in 15 minutes. Great served with sausage or bacon. Great for breakfast, brunch or even dinner.

Ingredients For eggs in purgatory

  • 1 Tbsp
    olive oil
  • 1 sm
    onion diced
  • 2 clove
    garlic minced
  • 1 c
    tomato sauce
  • 1/2 tsp
    red pepper flakes
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 3 Tbsp
    fresh parsley chopped
  • 4 lg
    eggs
  • 1/4 c
    grated parmesan cheese

How To Make eggs in purgatory

  • 1
    Pour oil in skillet over medium heat. Saute the onions about 3 minutes. Add the garlic and saute another minute. Stir in the tomato sauce, red pepper flakes, salt and pepper.

    Cook about 5 minutes allowing the sauce to thicken. Push the sauce to the side and break in an egg. Do this for all the eggs. Place a cover over the pan and cook until whites are done.

    Remove cover and sprinkle with parsley and parmesan cheese.
