This is a great breakfast, but it also works good for dinner. We love breakfast for dinner at my house because we are always rushing out the door in the morning headed to work. There's something comforting about having breakfast at night....lets you remember when there was a time that you could actually sit down and enjoy breakfast!

    baking potatoes
  • 1/4 c
    butter
  • 2 Tbsp
    butter
  • 3 Tbsp
    sour cream
  • 1 Tbsp
    chives, chopped
  • 1 slice
    bacon, cooked and crumbled
  • 2 tsp
    salt
  • 1 tsp
    black pepper, freshly ground
  • 6
    eggs
  • 1 c
    cheddar cheese, shredded

    Scrub the potatoes. Prick each with a fork. Bake at 400° for 45 minutes to an hour or until tender. Cool slightly.

    Cut off the top third of each potato; discard or save for another use. Carefully scoop out the potato pulp, leaving 1/8 inch shells. Set the shells aside and mash the pulp with a fork.

    Combine the pulp, butter, and next 5 ingredients in a bowl. Stir well. Spoon evenly into the potato shells. Place the shells on an ungreased baking sheet. Make a deep well in the middle of the mixture in each shell. Break 1 egg into each well; sprinkle evenly with the cheese. Bake at 350° for 20 to 25 minutes until egg is set.
